Family Activities News: Try the new Baking Contest

As I am writing this article, it’s a balmy 8 degrees (without the wind-factor). But it’s the perfect time to do some baking. It makes the house smell wonderful and helps warm you up! Have you tried to make this year’s baking contest for the Blueberry tea cake recipe? I made this and documented each stage with pictures.

Those of you who made it to December’s Zoom meeting were able to see it and were excited to try it. There were a couple of things that were mentioned, one was that it tasted bland. I said a tsp of vanilla added would be acceptable, but I baked 2 batches one with vanilla and one without.  Both came out really good. The second comment was regarding the pan size. I will say that a 13 x 9 pan is too big and made a really thin cake. If you have a smaller rectangle pan or a small square pan, they come out a bit higher and are easier to cut. I actually enjoyed this recipe very much and it makes a very small batch. Perfect to take some with you when you visit someone. Sit and have a cup of tea (or coffee) and enjoy this with a friend.
